The bigger problem the PT had going on visually was being filmed on early digital cameras, which fucked up the colors so much that it made everything look like a cartoon. The Prequels actually used a substantial amount of practical effects, even though the behind the scenes stuff only highlights the CGI and green screens. Each individual movie in the PT had more models, costumes, sets, make up work, props and so on done than the entire OT combined.

Episode II in particular suffered the most, as only some scenes in I used digital, and the cameras used in III were a good deal better though still not ideal.

Its kind of amazing what some simple color correction on the blu-ray copy can accomplish. In each of these bottom is the original, top is color corrected.

If Lucas was so determined to readd this scene, I don't get why they didn't just take the original footage with the Jabba stand in actor and redub the audio to make it another confrontation with a henchman. Adding CGI elements into the background is one thing, but there is no way anyone thought adding such an up close CGI character into 1977 footage was going to work on any level.

Makes me want to consider getting the blue-ray copies.

I think it would've been best to just forget the whole scene with Jabba since Greedo already served as the needed henchman scene. Regardless, even the improved Jabba fells to resemble the original much, at least in my opinion.

That is color correct done using the blu-ray quality footage, not an improvement done for the blu-rays itself.

And yeah, the Jabba scene is entirely pointless, which is why it was cut in the first place. But I'm just saying, if it had to be readded redubbing the audio would have been the better alternative to trying to insert CG Jabba into a scene shot in 1977 that was never filmed with CGI in mind.
