Original version of OT is canon. Additions in later versions are canon, but changes are not. For example, Han really did step on Jabba's tail (at least, I don't think this conflicts with anything, I'm not enough of a nerd to be sure I'm not overlooking something, such as Jabba not being in Mos Eisley at the time or whatever) because it doesn't conflict with anything; however, Han shot first because Greedo shooting first or at the same time directly contradicts the original release.

Yes, and that's kind of the point. None of it really happened because it's fiction. Yet in the fictional universe, the EU did happen. It exists. Those books exist. They are part of the Star Wars universe. They were approved by George Lucas, the creator of that fictional universe. So therefore, fuck what disney says.

Only things seen or referenced in official sources are canon. It doesn't recanonize the sources they originated in or otherwise appeared in. As of now, the ancient eras of TOTJ/KOTOR and TOR are not canon, even though vague concepts and symbols from them pop up in canon. Like we get Sith specters, but not the background for the era they lived in.
