That stopped being effective shortly after TPM. The droids stopped being controlled by a command ship and had more intelligent models added to the ranks, some of which were very reliable. So if you killed their general and/or blew up their mothership they'd still function and still need to be wiped out. Time consuming considering their numbers.

Jedi were meant to be more stealth than fighting directly away, the droids never seemed a worth adversary.

There were 10,000 Jedi, and the CIS had trillions of droids. Most Jedi weren't even that skilled in open combat, just look at how the arena fight in Episode II went for them. A few hundred droids vs a few dozen Jedi, and most of the Jedi were gunned down.

Seemed reasonable to me, consider that it had been over 1000 years since the Jedi Order did any real fighting. They had only been acting as diplomats, mediators, and peacekeepers; not warriors in that time. I would also think that Droids pose a unique challenge for them, since they can't read them through the force like they can any living opponent.

never have i heard of jedi being more focused on stealth than direct attack. nevertheless, all jedi were given commanding ranks in the clone army so stealth was kind of not an option unless it fit in the mission, but that's what arc troopers were for.

All through the war they were using those dumbass droids that posed no threat to Jedi. Lucas should have introduced different droids like the tactical ones in Clone Wars.

I like the design of the Battle Droids.

They fit with the world of TPM but they didn't fit in AOTC or ROTS.
