For me, it's got to be VF5.
I'm rubbish at fighting games, but I adore this one. The fuckhuge movelists create a goddamn universe of nuances for every single character, and thus the way they can respond to a near infinite amount of situations. This is really apparent when playing mirror matches, and then it's obviously - but still impressively - multiplied by the size of the cast. I reckon you could play it for years and still not learn the damn thing inside out.
The characters and their movements are exceptionally fluid and, for me, this highlights how far the series has come since the Legos aesthetics of the first iteration. Though I will admit that most of the backgrounds aren't all that impressive, and some are just a little too sparse.
But what near kills it for me is the music.

What I mean is that I've sunk countless hours into this fucking thing and I still cannot bring a single bar of the soundtrack to memory, even if I try.
Maybe it's nostalgia, or maybe it was the way the soundchip on the Model 2 board synthesized squealing guitars, but I can still recall snippets of VF2's soundtrack to this day, and I sure as hell never put in the same amount of time with it.
