Usually once I muster up the gumption to actually watch/read something I end up watching it, but that initial sit down can be hampered by just stupid dicking around.

Like I've wanted to watch the original Gundam series for a long time but never actually got around to doing it, then I was recommended to watch it in release order and downloaded them.

Speaking of I am kind of hitting a wall in Gundam ZZ because it's really not very serious, although that just sort of changed as I'm writing this. The first Gundam series was a good blend of comedy, action, and serious commentary on war, Gundam Zeta was mostly serious throughout, but Double Zeta is almost a joke until around episode 25 or so. We'll see how it goes.

I'm honestly surprised I'm not fatigued as I've watched probably 125 episodes between all three series at this point.

I'm the same way OP. Usually it is because I mess around just browsing 8chan for hours at a time. For instance today I was on 8chan for the past 6 hours. I could have watched anime and I wanted to watch some animes but I was just lurking thread after thread and didn't really feel like stopping my postings.

I have about 4-5 'moe/cute' type animes that I've been wanting to watch for some time and the sad part is I know a lot about the animes I've just never seen them in their entirety. Whenever I login to YouTube my recommendations are snippets from shows that are 1-2 minutes in length and I'll binge watch 20 or 30 of those clips so I know what the show is mostly about but I just have never sat down and watched an entire one episode of said show. It's very frustrating because I'm either eating and when I eat I don't like to read subtitles. Or I'm ready to watch an anime but the beginning is too slow of a buildup so I start browsing my tablet. The worst is when my Mom is home because she already thinks I'm a loser when I watch anime so it is very hard to keep stopping,pausing,rewinding,maximizing,minimizing my fucking anime window as she keeps passing my screen.

You have likely developed and reinforced a boatload of habits that functionally result in something similar to ADHD. Vid related is a perfect description of what the experience is like.

Your reward pathways are likely all fucked up, but it is possible to reset them, see pic in next post.

The best way to deal with miswired habits is to essentially fast from them. Then you can build the habits you want to actually have back up.

Changing a diet to get better nutrition can help, but is more of an important factor for those with actual ADHD. The majority of ADHD suffers can have their issues be completely resolved by uncovering which severe nutritional deficiencies the person has typically have, removing various food sensitivities (which cause brain inflammation), and focus training. Incidentally this also works very well for depression as well. If anyone is curious I can suggest materials that go over this.
