I'm going to assume that by 'made' you mean 'finished', since there's a lot of them out there. Some are even ongoing.

The thing about open text adventures is they keep going indefinitely until the person running it gets bored, so it doesn't really follow that they'd 'finish'.

It's not a videogame. it's a written story.

Basically you plan out the backbone of a few different story branches, then present the readers with choices on what the character should do on a chapter-by-chapter basis with each subsequent chapter being based on the consequences of the previous choice.

Think of it like a D&D campaign, except with only one player character and much less player input.

I'm thinking games more like zork. Games that use an actual text interface. There are games like that use gargoyle and other programs. There was an unnamed game that was really good. It was on foxtalestimes website.

A good place to start might be to have a look at making a twine game:

it's html-based, so it's not as open as Zork with the kind of commands you can give.

Here's something that makes an already brain dead easy thing to program easier, that even your death bed grandmother, who hasn't seen a computer, can do.

srsly tho I think the reason is that text adventures have always been kinda obscure, you've gotta be older than thirty to have even realized they existed and even then (I remember) something like 10% of Americans owned a computer in the late nineties. so as this thread further validates, a lot of people have never played or even know of text parser adventure games.
