Unless you post screenshots of how you're using those programs when making the game, there isn't really any way to tell if you used Blender to make a 3D model or 3DSMax. Just make sure to never reveal anything that could be considered proof of you using those software for the game in question.

Depends what you're into I suppose. I like Unreal 4 a lot and there's tons of Unreal 4 tutorials.
But whatever your area of fascination, they're stuff there. There's countless - I mean literally hundreds of thousands - of tutorials on how to do any specific thing you could want with photoshop, or 3D modeling, or design, etc.
