You could try emulating PSO or PSU. I tried playing through PSU but I'm too lazy to finish it, wouldn't mind watching someone stream it. There's also a private server for PSO so you could do the online portion.
There's also Drakengard 3 and Nier. A new Nier game is coming out and it might draw people in if you stream the old one. You'll need a capture card though.
Though these two are something I'd recommend streaming only if you have a group of people that will watch it through, you need people that already come back to watch.
Streams are boring when you don't have enough viewers to get conversations going. Invite some other people to start streaming and get a rotation of people that stream during the day. Hell, just make a post here asking if anyone wants to stream. That's how the 50 or so streams that started on /v/ got to how they are. Right now most of them are dead or dying off, with the exception of Vinesauce. Now is a good time to get a stream site started.
Once you're settled in you can do comfy stuff like DS games, Runefactory and such. Then you can do some of the longer overarching games like the above.

God, I wish it was quicker and easier to make quality videos. I could do any number of videos on ANIMES, but it takes so fucking long to make any video… I was thinking about it like an hour ago, and ideally, I'd want to do one or two Twitch videos and two regular videos each and every week. But I need time to shitpost, talk to people, and watch shows, too. So it's so hard to find time to actually work on videos, especially when they take so long to complete. On the bright side, though, the new mic should make it so that I almost never have to re-do any audio takes or edit out shitty pops and other noises from the audio bits. I thought of a game that might be good to play that is definitely more "weeb" than Undertale is. Actually developed in Japan, and also adored by weebs everywhere. But I can't really stream it right now, because it's too short notice and too late at night… in America. And weekends are crazy booked. And if it comes down to waiting for Sunday, Monday, or Tuesday, well, shit, I'm overdue for Undertale by a whole week at that point. But, I dunno, I want to play some damn vidja, so maybe I'll try to get home soon enough on Friday or Saturday night and JUST DO IT.
It would be a stark contrast to Undertale in terms of my performance in the game, because it's one of the few games I've actually beaten all the way through. Not only beaten, but 100%'d… but only on Normal… this run would be Expert, so there might be some of me getting owned even still.
Also, I spent a couple of hours on the highlight reel tonight, first video editing I did all week, and I'm upset, because I wanted to do this, but it's taking so long that I am not sure if it's worth it, especially when that time could go towards all-new original content, or sleeping in order to get up early enough to try to solve certain real-world problems.
