They're good at what they do, which is drawing/painting what they see, developing technique, and studying human anatomy(and teaching all these things). Each atelier has its own quirks. Some focus more on construction and knowledge of forms/planes, some more just 2d shapes.
They're not just a bunch of people who can't get with the times. They, however, probably reject the present times, and instead see value in the past and tradition.
