There's all the business, economics, finance, actuarial studies, accounting, etc courses which are of varying value.
There's law.
There's nursing and paramedics.
There's teaching.
Fuck there are some universities that don't even have arts faculties - QUT for instance but that doesn't mean they're purely "STEM".
And a lot of "STEM"' degrees are shit, Science in Australia is shit, the only reason to do it is if you want to go into research and even then you'll probably end up going overseas eventually.
And yes I'm talking about the 'hard' sciences like chemistry and physics. Undergrad science degrees even in hard sciences are basically worthless no matter the major, but still, god forbid you do biology - and fuck, psychology is "STEM" at many uni's as well.
IT is "STEM" too and the job market isn't great, 457s and offshoring is an issue for IT in particular.
Honestly people should just fucking say "Engineering" and be done with it instead of sperging out with the "STEM" bullshit all the time. You're talking about Engineering.
