A lot of them will do this thing where they put themselves down at every possible opportunity.

I of course then try to reassure them by paying them a compliment (almost always a genuine one about something I actually find attractive in them).

They will then disagree with the compliment.

Many bigger girls do this repeatedly and often.

It feels like banging my head against a brick wall because nothing I can say will be believed or appreciated.

Any other guys encountered this?

All women do this, all the time. Each woman is unique and you can get them to accept the compliment, but you have to know how they work.

This, basically. Just about every girl I've ever talked to (and I've talked to quite a few) has had some sort of insecurity about themselves physically, even if they don't constantly complain about it. It's especially bad with girls who have been always fat. With a few exceptions, they get a LOT of shit through their grade school years. It gets to them deep inside, even if they don't want to admit it. Even a number of ones that go on about body positivity aren't ACTUALLY confident in their own bodies. It can take years to rebuild one's confidence. Even though I didn't get shit for my weight in grade school, it took years of multiple girls saying they found me at least decent-looking to accept that I'm not as ugly as I had originally thought I was.

That aside, the best I can say is to be persistent. Be genuine with your compliments, and they MAY turn around (some never do, though). Self-confidence takes a long time to build, don't take it personally if they don't accept it at first.
