Had the idea for this theory when I saw the leaks for Watermelon Island. It struck me that Steven basically just spawned a new sapient race out of his spit. Considering how much thought this show puts into this sort of stuff, I think the following theory is pretty reasonable.
So, first off, gems and humans look very similar to each other (two arms, two legs, etc.). Why is this? Is it just a coincidence that a completely alien race looks almost exactly like humans? I don't think so.
My theory is that Rose, or perhaps a predecessor to Rose, created humans in the image of gems, and that's why they look alike. Maybe humans were created as a gem experiment, maybe they were created by accident, but humans were in fact created by gems. Maybe all biological life on Earth is just a failed gem experiment.
Flash forward to the present, you have Steven literally creating sapient life, in his own image (but as watermelons). The watermelon Stevens have their own culture, their own emotions, etc. They all look just like Steven, just as all humans look like gems. Steven did this by accident. What's to say gems couldn't have done the same on purpose thousands of years ago. When humans didn't pan out, they decided the best thing to do would be to destroy the evidence of their failure. Rose, as either the creator of the humans, or simply as a sympathetic gem, decided to protect the offspring race against Homeworld.
I predict that this is going to be an upcoming twist in the show. Discuss.

Apparently, since gems are artificially produced, all gems of the same class look the same except for the position of the gem itself which suggests they don't choose their original form. Because their bodies are projections with mass they can change it at will, but with some limitations: Some facial features and the gem remain the same and there seems to be a limit to the size based on how much energy the gem has. Amethyst isn't able to sustain a bigger form since she was incubated for too long and as a result it's not as powerful as gems of her class would normally be.
We haven't actually seen how gems are "born" so this might change in future episodes.

Their forms are physical manifestations of their personalities. Most Pearls are going to act something like Pearl so they will also look something like Pearl. They theoretically COULD change their forms, but since their forms are based on their personalities and their personalities are hard-wired their forms are not going to change.
Also size seems to be linked to power/potential. Amethyst is small, but still pretty strong. Garnet is a fusion, she is bigger and stronger than her components. So size is also limited.

What? No, you're completely missing the point.
She did not succeed in reforming because of the development, it was her conscious choice to take her time and "craft" the new form.
The forms she took during the episode were not unstable directly because of her childishness, but rather because she was careful when rebuilding.
And in regards to pearls acting similar and looking similar, if anything, that's correlation, not causation. Their looks and personalities are alike because because they are both pearls, but if one had some unexplained personality shift, it wold not make her immediately change forms.

They clearly change form as they develop and have personality changes. It's their form of maturing. You can even see it in episodes where Pearl is younger. No they don't INSTANTLY change form, but whenever they have the opportunity to they will because it's convenient.
And in that episode Amethyst DID have a personality development. Steven literally says it out loud; "Amethyst doesn't like thinking about herself." When Steven said that she realized he was right. She took her time and her form also changed slightly from her original model, but she is still an Amethyst.
All of her form changes in that episode were based on outside influence. She did not know herself so she was trying to change form to please others.

All real crystals in our world have a molecular structure, and brains have these things called neurons which also have a structure that is patterned and doesn't vary too much. It's reasonable to assume that if the crystals are the true heart and soul of a gem, and if all Pearls have similar crystal structures then logic demands they would be similar in other ways. Logic also demands that Pearls would probably not think like Diamonds or Amethysts. No this isn't cannon, but it makes sense internally and I suspect the writers of the show themselves would be hard-pressed to come up with a better explanation for why Pearls look and act the way they do.
But don't take my word for it, FAGTRON. Tell me, where do YOU think a gems personality comes from? If it doesn't originate in their gem does it come from a Gem soul? Is there a gem heaven? How much extra bullshit do you have to add to give us an alternate explanation? This is why I think personality and form are linked; because it is the simplest answer based on what the writers of the show have given us.
