I like to use a chicken broth, it's just easier.
Here is how I like it;
Whole chicken, with neck.
a carrot, or two, peeled and cut into 3 parts and split, so about 6 pieces per carrot.
An onion, red or yellow, depending on preference.
A stalk of celery, cut the same way as the carrots.
Some parsley, and other herbs depending on taste.
A bay leaf.
A clove of garlic.
Add water, bring it to a boil and skim the top.
