By making sure our females breed with a wide variety of monstrous races and maintaining a core of pure-strain humans, we can develop a new race. It will be kept genetically close, prevented from splitting off into separate races by means of reintroducing pure-human stock into the hybrid lines.
Then, once we have the traits we desire, we simply interbreed all the hybrid lines, making sure to reinforce desired traits by occasionally breeding with monsters, and maintaining genetic cohesion by breeding with pure-humans.
Done carefully, our new race will homogenize, each member having all the best parts of monsters/humanity.
tl:dr - we can just breed humans like we breed mice in the real world.
