It's just a mum thing I think. My mum is exactly the same. Every time I visit her she feeds me until I'm about to explode and is worrying about my 'low weight'. I think it would be the same if I weighed 200 kg because I have a fat sister and she does exactly the same to her.
Just use this as a lesson to help you reaffirm who you are and what you want from life. Solidify your convictions and don't let people walk all over them and all over your lack of assertiveness. It's fine to be assertive with your mum, it doesn't mean you're being disrspetful. It's more like finally severing your umbillical cord and being like
"Yo mama, I'm a big girl now. My own person. With my own opinions and desires"
She will always see you as her little baby in some way anyway, but it's good to use this weight thing as a 'divider' in your relationship to show her that you're in charge of your body life and you can say NO to that tenth cake slice she's trying to shove down your throat
