I just ate the whole package of chicken breasts.

It weighed 550g before and 350 after.

From the calorie and protein sources on the package, which number should I use to calculate what my food is worth?

Same deal with some vegetables I made on the side, but they are less important. I think in that case it would make more sense to weigh it before.

They lose water, take notes before and you're ok.

550g (before):

566 calories . 103/100g

128,7g protein 23,4/100g

Afterwards it's 350g, which I'm going to calculate (based on the before numbers) results in these numbers:

162 calories per 100 g

36,7 protein per 100g

does that make sense?

That's why I mostly use Jewgle, searching for a specific food like Chicken Breasts I get many options for different ways of cooking them, or raw

Try searching "Nutrition facts for X raw"

This is such a classic /fit/ question, it is up there along with "should I subtract the weight of the bar?" and "should I bulk or cut?"

Just remember that protonz do not evaporate in the jewoven. So if you have to choose, choose the cooked chicken in yo calculations. In general 20-25% of raw meat will evaporate during the holoca…during the cooking.
