Who's the better fighter? Goku without question. Superman is no slouch, but Goku has trained seriously all his life whereas Superman has always been more focused on being in control of what he has than cultivating his abilities to his fullest. As such, Goku simply knows more about unarmed combat, despite Superman's training from Batman, Muhammad Ali, et al.
Who's stronger? Hard to qualify, but likely Superman. Goku's feats of strength could mostly be qualified by how many times Earth's gravity he trains under, but once he starts training in the hyperbolic time chamber (Cell Saga), that information becomes irrelevant. In contrast, Superman gets nearly constant chances to do great feats of strength stopping falling objects, moving planets, etc. I'm going to go out on a limb and say that the observable is more compelling evidence than the unobservable.
Who's more durable? Probably Goku. This is a bit complicated, but Goku has been sent flying through pillars of rock unfazed whereas Superman tends to at least be stunned for a second or so after getting knocked through walls. Both are tremendously durable but Goku regularly seems to take beatings of the caliber that Superman took when fighting Doomsday.
Who's faster? Both are kind of. Superman is Usain Bolt, Goku is Bruce Lee. In a fight I'd rather be Bruce Lee.
Who has better reflexes Goku without question. He just fights faster opponents more frequently than Superman.
Who has better senses? Superman. X-ray vision, telescopic vision, super hearing, etc. Very hard guy to trick, but that's not really Goku's style.
Who's energy projection is better? Very hard to debate, and likely what it boils down to. There's a lot to be said for Superman's abilities. Telescopic vision + heat vision is one helluva combination. X-ray vision + heat vision = near instant lobotomy, but that's not really Superman's style. Freeze breath can stop slower opponents in their tracks. Heat vision might be flat out the best ability in Superman's arsenal in a fight. If he can see it, he can hit it and it can be obliterated. He's used it in a similar way to a FLAK canon in a recent Superman comic (I think it might've been Unchained) and in a Superman/Batman story he used it to knock out an army of Doomsday clones (nowhere near as strong as the original but worth about 1 amazon each).
Goku probably has this though. Master Roshi used a kamehameha to blow up part of the moon during the original dragon ball. Ki energy regularly goes to planet crushing levels and Goku is doubtlessly capable of it by the end of Z. What really kills it for Superman though is that his own resistance to magic is on par with a regular human's. Ki likely is some form of magic, meaning that Superman could potentially get one-shotted or two-shotted by Goku if he goes to using ki, which is pretty much his go to as long as his opponents aren't in punching distance. Even if Ki isn't magic, Superman generally doesn't do as well against energy projectors as he does against bruisers and unfortunately for him, Goku's both.
Goku can outfight Superman and probably has a better range game. It'll definitely be a fight until the ki starts flying, though.
