Well, anyone can hold a castle, but only feudal lords can hold them without substantial penalty. Presumably what's happening in your game is that you're getting a "wrong government type" penalty because you've gone feudal but all of your vassals are still tribal. They'll get there eventually.

Thanks. Thats what was happening and I didn't know how to make my vassals feudal too. Another question I have is how do I take more than one province at a time in a war? It takes forever to take over all of Ireland one province at a time.

Send your diplomat to falsify a claim on the capital of any duke and there is a random chance that the event will give you the opportunity to claim the duchy instead of the province.

Personally, I just forge a bunch of claims and then press them all at once.

Your chancellor also needs to have 15 or more diplomacy for this to work.
And for OP, another option would be to go heretic and holy war whole duchies at a time. Just be careful not to get roflstomped, because chances are, everyone and their mother from Scotland to Brittany will jump at the chance to join in defense of the faith.
