Brotip: use the 1861 start. In that start other nations besides China actually have troops recruited so China doesn't just rape everything, and usually Britain holds them off long enough that they have to westernize the normal way instead of by conquests, and gives Europe time to get their shit together and mount a real defense.
Makes for much more interesting worlds.
This one looked like Britain was a strong contender for a while but now it seems like it's either going to be China or France ruling the old world.

Surviving nations:
Britain - lives on in Australia, New Zealand, and various small islands around the world.
Netherlands - Indonesia and Taiwan, currently engaged in a war in Borneo and New Guinea with Spain and Brunei.
Spain - desperately fighting for survival after they got lucky and colonized Borneo and New Guinea shortly before China drove them out of Europe. They were the last European power to hold their capital.
Two Sicilies - at one point held most of Western Europe, now confined to Gotland in the Baltic Sea.
Prussia - former masters of Europe and the British Isles. Fought valiantly against the Chinese hordes and is now confined to the Isle of Man.
Philippines - declared independence from Spain quite early on.
Ottoman Empire - survives on Cyprus and the Ionian Islands.
France - still has holdings in the Ivory Coast and small islands around the world. Also controls Greenland for some reason. Once China colonizes the wastelands next to them it'll be curtains for the French.
Holstein - still in its native Denmark. Has somehow not been eaten despite not being in China's sphere or a puppet.
Argentina - look at the veeeery tip of South America.
Cuba - declared independence from Spain a long time ago. Absolute Monarchy.
Japan - was a Chinese puppet for the longest time. Is now going it alone.
