What's a good book for getting into Linux that preferably doesn't require extensive programming knowledge? Just basic things about how it functions, how the filesystem is handled, what the kernel does etc. Also, I've been dabbling in Ubuntu for a while now, but while it has been enough for my needs so far would there be an advantage in switching over to Gentoo/Arch at this point, or are they more for people that know exactly what kind of system they want?

Honestly, it all depends on what distro you are using as far as books go. If you are just beginning to learn Linux and it's basics, I would start with Ubuntu. A simple "For Dummies" book, which I've looked over, takes it pretty simple. Another set of books to look into is the Sam's Teach Yourself series. They have some older books on Linux that are always really easy and self-explanatory.

I would stay on a simple OS like Ubuntu before moving to Arch or Gentoo. Personally, I'm not the greatest fan of arch, as I'm more of an Ubuntu/CentOS/Debian man. This isn't to scare you away from those distros, just a word of advice that Arch is a bit more overwhelming then Ubuntu. If you really are curious, I'd say learn the basic linux functions with Ubuntu, then move over and do a test run with Arch.

As you've probably heard, Ubuntu is a pretty good choice. It's good for people who are relatively new to Linux and is aimed at (superficial) simplicity. It can do pretty much everything that other distros can, and there's a ton of support and resources online for it. If you're completely new to Linux, things will be pretty different so you'll probably want to smoothen the transition a bit.

Fully installed and not dual boot, I installed xen thinking it was something else.

But I have removed it using every means I can think off and still getting error messages.

That seems relatively secure as long as you uphold opsec, but remember that the VPN can get you busted if it turns out they keep logs for whatever reason. A bunch of people from lulzsec got v& because HideMyAss gave the feds their logs. Honestly, a better solution would be to use a rooted box somewhere in russia (or a couple of them) to act as a proxy to the VPN, then a couple more to connect to tor. S it would go like

you → rooted boxes → VPN → rooted boxes → tor → internet.

Of course, this method would be almost uselessly slow, so you might need to cut corners.

Kali is for hacking. Nothing else.
For a desktop distro, take your pick. Some say Ubuntu, others say Arch or Gentoo. Doesn't really matter so long as its for desktop use.
