Vz. 58 is nice and you can get them cheap in your country. Look for one with a chromed barrel. You want the metal folding stock, it's just better. If you're into optics then you'll want the side-mount rail. Don't do dust cover or handguard mounts.

Para FAL would be something I'd buy in your shoes. I love chopped down compact rifles, 90% of the functionality for 60% of the size and weight. I think communists have a natural fear of the FAL, hence why they are banned in my country.

A high end 10mm CZ clone like a Sphinx or a match grade Tanfoglio would be alright, you could easily get that and have $500 left over.

Buy a silencer for your gun. I've seen and fired silenced guns and it's just better. If it was legal here I would have a suppressor for all my guns.

I've actually been looking at getting a Galil recently. They any good? The first gun I ever shot was a Galil so I'm mostly doing it because Galil is best girl as well as for the nostalgia factor.

I'm pretty sure those are out of OP's budget. Might be wrong about the "MP5"

The new one (ACE) has some retarded design decisions IMO.

Isn't Definitive Arms a bit cheaper and comes with Polish made receiver instead of Bulgarian, the barrels are said to be good quality (re-crowned) and some videos have shown very good accuracy. I'd pick one of those or a Vepr if available before anything else (AK wise).
