The thing is, I have no ground to believe that you can't know if there is a deity. I have neither proven nor disproven whether one exists, but that doesn't mean somebody else hasn't done either and has laid out the answer for me, even if that person is me from the future or something.

What do you mean by "Judeo-Christian values"? Both do have the same heritage, but I wouldn't say that modern Judaism is friendly with Christianity. However, Judeo-Christian philosophy was the first to put governance in God's hands, recognising the corrupt nature of man. Without Judeo-Christian culture we would still be under some pagan dictatorship.
