The three main 'space operas' of Macross, Votoms, and Gundam are basically the originating branches.
Votoms are basically the Aliens power loaders with jets n' gunz and a huge amount of realpolitik and Star Trek technobabble
Gundam is in between, like a harder Star Wars, with the original 3 (MS, Zeta, ZZ) and their related spinoffs being
mostly scientific with a handful of fantastical elements like the newtypes (the lynchpin of the twist to Super tends to be Wing)
Macross has only normal humans but 'stuff just works' science-wise, like lasers that are able to bend and adjust paths in flight, and planes that carry 60 more missiles than they're shown with. In these sorts of shows, also expect lots of weird metaphors in dialogue and plot.
Super Robot (lone or small team of heroes vs an army) also has that sort of divide. With Daimos, Big O, Kishin Corps, and Giant Robo being on the 'realer end' and then universe crushers like Gunbuster, Ideon, Zeorymer, Gurren Lagaan being on the farthest fantastical side.
As my recommendations for starting shows points out, I vastly prefer the realer end.
There are also two US series OP may wish to look into, Exo-squad and Battletech.
Also regardless of your tastes, check out Kishin Corps for some fine lulz. It can quite literally be summed up as a Japanese take on Harry Turtledove's alternate war series, as Germany is beating the snot out of the allies, then suddenly aliums. And Germany and the allies both build giant robots after Germany allies with the alien menace.
The robots are essentially walking submarines, as internally they have massive piston-filled turbine-y ship engines, so there's lots of fun scenes of the supporting cast running around cranking and kicking things to get the big palookas to move.
…and then there's the new 1950s sci-fi inspired German uniforms.
