If I'm lazy and just want to whip up a quick pie using some left-over's (like if we've had a chicken dinner recently or something) then I just use sheet pastry. Does the job, although home-made pastry is admittedly superior.

When I decide to make a pie I use the quick flaky pastry method, grate some frozen butter into flour, smack it with a spoon until crumbly, add water to make it pastry and then fridge it for a while.

Par-cook some big chunky meat, put some sauce on it, whack it in a pie and throw it in the oven. Easiest thing in the world. Also makes dynamite mince pasties, just roll out a circle, plonk some mincemeat on one side, egg the edges, fold it over, egg everything, throw it in the oven.
