So it is a weird sort of "fusion", although it seems like Emile is aware of being made of 5 spirits while still being one entity, neat. I wonder if they're all consciously-aware as separate beings working in tandem automatically, or it's a brand-new consciousness that knows its origin but thinks independently from its constituent parts. Guess I should've had that be one of my questions earlier.

From the sound of it, if she reacted that poorly to the question, it's very well possible that "Emile" only exists as long as the 5 spirits are fused in this particular doll, and the doll falling apart or being opened up again will inevitably "kill" her by re-separating the spirits into distinct entities. I'd assume she can probably enter some kind of "dormant" state, similar to sleep minus the biological aspect. If spirits are energetic and she's basically just one made from 5, it seems sensible to me that a spirit like hers would be able to go into a "low power" mode while lying in wait, especially considering how many times people have reported hauntings going quiet for long periods before the ghosts pop up again when disturbed in some fashion.

As a Christian myself, I really don't think it matters that much if you've got a monster girl doll waifu in the grand scheme of things. Near as I can tell as someone who hasn't exactly consciously-died at any point, Jesus doesn't actually give a shit that you're fucking a doll, as long as you're a good person and help others, although there may be the consideration of whether you're a good person to your dollfu as well since she's conscious and "alive".
I don't see how taking 5 wandering spirits (some or all of which might or might not have been dead people), combining them into a new entity and then showing true love toward this new being of your own making is wrong or evil in any sense. I mean, it might come off as a bit witchcraft-y, but once again, you're doing good things with it for well-intentioned reasons, and not hurting anyone except possibly yourself if things go wrong. You're not exactly trapping the souls of the dead to make them power an enchanted fleshlight against their will or some horseshit, you're just letting a bunch of spirits chill out in a doll and power a new conscious entity, which can at any point say "I'm done, pull the plug" and have you likely respect its wish for things to end.
If anything, it may even be a mercy and/or kindness toward these spirits, since you've either saved them from lonely wandering/potentially going to hell if they're human, or taught them the meaning of love and humanity if they're inhuman. Being a doll and beloved by a human sure sounds like a better deal than eternal limbo/suffering, or if it's made of things utterly-alien rather than human, it sounds like a fun learning experience. In either case, it seems as if your actions are showing kindness and mercy on quite an impressive level, especially considering the inherent risks to your own life doing so, so I'm not seeing any reason for anyone to raise a fuss.
The whole "worship Ammit" thing would probably cross a line, but even then, there's nothing saying you couldn't continue to exclusively worship God and just shoot a thumbs-up to Ammit as a friend/ally whenever she helps you, as if she were just another conscious entity like the dead who has to answer to God. Besides, I see no good reason to ditch the entity you know's got you covered and has been there for you from birth, in exchange for some random female entity who could be and do anything in terms of morality, the same way you generally shouldn't cut ties with your best friend just because a hot chick doesn't like him all that much to start with.
Ultimately though, like so much in life, the important part probably isn't what you believed in or if you did weird things, but whether or not you were a sadistic, insufferable cunt who ruined everything else for everybody you possibly could.
