You also need the following to ensure you don't get stranded in the middle of nowhere:

5MM mild steel wont do much to protect you from basically any ammunition except maybe .22

you can get used chest sized SAPI body armor plates for $70-100 if you look around that are much stronger, that you could embed in the doors and along the back of the seats that would be much more effective

also my vote for a vehicle would be any 99+ 4.8 or 5.3 GM truck or SUV and just store a large amount of gas ahead of time, along with fuel stabilizers
