There are many ways to get around this. The first is to persevere. Some of the tests I took around 50 times before I finally got gold or even silver. In all games you should always opt for Manual as you can slow down quicker by grinding gears. There's also a nifty little cheat in GT3 (don't know if it's present in other games) where you can hold down the trigger buttons if you have chosen Automatic to prevent the car from changing gear. Sometimes you gain a couple seconds from doing this.

I don't understand what happened with the new Gran Turismo games.

It seems like with each new platform they change the engine so you can turn less and after the PS1 versions you can't really go sideways

It's like racing trains that you can steer (barely)
