Well, it shows that what you're about to say is simply your opinion or stance on a certain matter. So, the validity of the statement would change since you're showing it to be purely subjective.

It can either mean that you want to downplay your conviction in the matter, showing that you have an open mind, or you could try to portray the issue as subjective. Depends on the context.

Saying "you have shit taste" and "I think you have shit taste" is basically the same, because there is no such thing as objectively shit taste except yours, so stating "I think" is redundant.
