I just finished watching Fullmetal Ahclemist: Brotherhood and before that I watched Hitsugi No Chaika. I'm looking for something similar to those, I guess you could say they're a bit more mature shounen without any filler bullshit. I don't know, you tell me.
All I know is that I'm after something similar to sink some time into. I'm going to bed, I'm hoping that I'll wake up to a reply or two.

The 2000 OVAs adapt part 3 of the manga while the 2012 version adapt parts 1 and 2.
The 2014 version of Jojo is adapting the part 3 of the manga so there are no reasons to watch the old versions.

Seconding HunterXHunter. If you ask me, the older 1999 version was more "mature" and certainly toned a lot darker (both figuratively and literally as the color palette was very muted compared to the shiny, colorful 2011 version) but your mileage may vary. Either way, it gets dark pretty fast and then just keeps getting darker and more mature as the series goes on. The last arc was definitely edging into seinen territory, if you ask me.
I don't know if they've dubbed 2011 yet, but the dub for 1999 was ear-rapingly terrible.
