You just need to get lucky. No, really. Good skill choice will get you pretty far, but you need good old fashioned luck to get good enough gear to make it past a certain point.

Some advice though: Polearms is a good defensive weapon skill. If you're going for heavy armor, try that in defensive mode.
Warlock is also good for defense, and you can pull some extra power out of it. The downside is perpetually low mana since taking hits eats it up.
Make sure you rest up between fights if you get the opportunity.
If you make it to the next floor after stealing from Brax, you're home free. Just don't go back up, and steal a bunch of stuff if you can. You can usually find a really good piece of armor or weapon in a shop up on the first floor. Just swipe it before you head to the next floor.

My strongest runs have been crafting-centric, usually smithing (free resist fire, free damage, free strength and crafting, yum), Sword, warlockery, viking (for the level 1 buff) and astrology (same, since it's based on hits not mana).

With blood mana, Warlockery gets comically cheap especially when you get to the Puissant Viel.

In fact I got to level 15, but before I hit Dredmor, I accidentally broke my thaumic capacitor and nuked myself to death.

In my final moments, having no recourse, I used a The Bomb for comedic effect and got a few more points.
