Ravenloft is Gothic Horror though, not traditional fantasy, so think more Dracula than Lord of the Rings. It's also really dedicated to the source material, so much so that you're not going to be able to make significant changes to anything, which can turn people off.
EFU on the other hand, is a traditional fantasy setting but is currently in the middle of the apocalypse, everyone hiding out in the Underdark while the surface is a barren wasteland stuck in perpetual night being conquered by Cthulhu aliens. The servers plot causes some huge changes to the game world fairly regularly, which changes the entire theme and mood of the server. I know for a fact that the sudden constant change turns some people off (So the exact opposite of Ravenlofts issue, funnily enough.)
There's also Arelith, a popular traditional fantasy server, but I never liked it much, you need to constantly Eat, Drink Sleep and Pray, otherwise you get penalized and I've always thought that forcing players to RP these kinds of things mechanically actually detracts from the RP, it's also annoying as fuck to get chat windows spammed with reminders about it every minute.
There's also the server I was talking about before, Narfell, I wouldn't recommend it to be perfectly honest, player numbers are really low and there isn't really much to do outside DM events which can be cool, but lately have felt a little too high magic for my taste. The playerbase also has a lot of problems, stuff like people not taking things seriously when they should be and everyone trying to avoid PvP like it's the plague, also because there's so little players, there's really only two "cliques", the Good Guy team that makes up the bulk of the server and can be kind of childish at times, there's also a lot of accusations of DM favoritism being thrown at the big players of the group, since they've been playing for ages and are close to the DMs, and a lot of them have some pretty special stuff for their PCs. (Personally I think there is favoritism, but not out of malicious intent, just that the DMs doing it know these guys and feel confident that they wont screw up the special stuff they give them.) There's also the evil group which is horribly flat, everyone there is evil for the sake of evil and looking to prove they're the most evil by killing innocents as soon as they can.
I know I've got a lot of negative things to say about Narfell, but it's still the server I play the most, my PCs have got a lot of history there, there's still good RP to be had and there isn't much pressure either, on Ravenloft and EFU you're pretty much in constant danger but on Narfell you can just chill out and not feel like you're about to be murdered because you're standing outside at night.
