All of it. Literally. Physics and Math used to be the same academic discipline 300 years ago, and the two still share a lot even after the split.

You don't need all of it. For undergrad you will peak out at partial differential equations (calc 5) and linear algebra (the first "real" math course you'll take).

I took one class called Methods of Theoretical Physics which essentially covered all of the math we needed for higher level physics. We started with vector calculus and ended with complex numbers.

I am somewhat in the dark regarding graduate level physics, but they also offer a grad-level methods of theoretical class. From my buddies whom took it the class looked like it had the same underpinnings covered in undergrad.

Tensors are also going to be the bane of your existence. General relativity relies heavily on it as does classical mechanics. I somehow skated by undergrad without having to learn tensors proper.
