1. A grand strategy game. You can play as either an independent planet, a government which consists of several systems, a force-sensitive order, or any other faction of some influence (such as the Trade Federation). Default starting point would set you before the foundation of the Old Republic, around the time of the Rakatan Empire or the pre-schism Je’daii, though other starting points would exist, such as the foundation of the Old Republic, the Mandalorian and Jedi Civil Wars, Clone Wars, Foundation of the Empire, Galactic Civil War, and Foundation of the New Republic and New Jedi Order. Of course, some of these may occur drastically differently, or not at all, depending on how things play out. Anything could happen, even an Ewok-dominated Galactic Empire or Jar Jar becoming Supreme Chancellor. You will need to maintain stability as your population is divided by political affiliation, force sensitives vs non-sensitives, light or dark-side leanings, species, etc. Various Star Wars characters can be assigned roles in your government or military, either for term limit or life depending on your laws, though if history is different they may not be in the same faction as canon. For example, if the planet Stewjon has a heavy dark side influence and the Jedi Order has little influence there, you may later find Obi-Wan Kenobi leading the Order of the Sith. You would have to manage the research of new technology and ideas, as droids, weapons, ships, etc become outdated and replaced. You can choose whether or not to enact certain decisions, such as the Ruusan Reformation, the Je’daii Schism, the Rule of Two, the foundation of the Galactic Empire, the formation of a Rebel Alliance, etc, depending on what you are playing as.
2. Set during the Old Republic, a few years after KOTOR 2, with a long storyline that branches out near the end. Not just into Jedi or Sith, more gray areas than that. KOTOR classes and similar character building, but with a combat system similar to the Jedi Knight games. Party members of various races and alignments, though you hold influence over them like in KOTOR. Lots of lightsaber-customization and lots of different weapons and force powers.
3. Similar gameplay to number 2, but open world, less plot heavy. Single-player and multiplayer options. Keep the KOTOR classes and mechanics, and a combat system like Jedi Knights. In addition to choosing a class, you can choose from certain humanoid races. All kinds of lightsabers, blasters, and plenty of other melee weapons, such as vibroblades, Stormtrooper riot batons or Magnaguard electrostaffs. Extensive ship customization. You can get a person fighter, a freighter, even a Star Destroyer. While traveling through space you can either chill out on your ship while on autopilot, which you can also customize the inside of, or manually fly your ship and also engage in space battles. Rogue Squadron gameplay. You can join or defect from the various factions in the galaxy. Instead of party members, you can purchase various kinds of droids which you can upgrade/modify that stay on your ship unless you have them accompany you. If you don’t feel like caught up in a war, you can always just find somewhere to race swoops, play some pazaak, or go to a Cantina.
