It was because sand reminded him of being a slave on Tatooine, his mother and friends he had to leave behind. Anakin hated being called a slave and the sand brought back all those bad memories.

No I agree it's a good line that harkens back to him being a slave and it connects with his feelings of hatred, it just felt like he said it weird I guess, but that might just be me.
