The idea behind some of the prequel designs was clever. The original trilogy was made in the late 70's and early 80's, and the prequels was a generation before that. What was incorporated into the aesthetic? "World of Tomorrow" and 50's type sci fi stuff. Chrome ships, fins on helmets, naboo pistols that looked like 50's ray guns. That out dated aesthetic feels antique, so incorporating it for the prequels made the tech feel antique just looking at it.
Logically the sequel would be the next generation, which would be apple istore troopers and these "no fun allowed we're adults now" ships. I doubt these TFA designs were made to be thematically consistent, but unironically made so that there's "no kid stuff, we're trying to be cool now".

I think your reasoning is a bit flawed. Star Wars is what defined the sci-fi aesthetic of its time. Even if the Prequels adopting the look and style of a generation before worked on a creative level it heavily clashed with what was already established and what people expected going in. For many it just seemed like a step backwards creatively, rather than a thematic choice.
The Sequel Trilogy continuing the aesthetic of the Original Trilogy makes sense on many levels. Reception of the PT's was mixed at best, the timeline leading up to the new movies seems troubled so going with the dirty and worn look makes sense, the polished "Apple" sci-fi look is incredibly tired at this point, and of course there is milking nostalgia dollars.

We don't know if its similar to the EU and the First Order is similar to the Imperial Remnant early in the EU where it was scattered and weak, something like the later stronger and more unified Imperial Remnant, or if the First Order is an Empire Reborn and actually has significant control over the Galaxy.

That only really applies to Phantom with the naboo craft and the battle droids, and that makes sense. The imperial war machine wasn't in place, or even looming. The Republic ships and tech evolved over the three movies to build up to what we're used to. The Venator Class destroyer and the ARC-170 are supposed to be precursors and they look like precursors. It works.
It's not just the new stormtrooper helmet that's "apple istore", it's the whole suit plus the variants. Now, regards to these new ship designs, I said they were "2mature4u" style. Especially that new shuttle.

It's actually a long train of moffs killing each other and announcing they are the new emperor to the point where each announcement holds no meaning. As I've theorized before, my guess would be the New Republic stops fighting with any Imperial Remnant groups and eventually allows the First Order to gain steam and become a legit threat to the Galaxy. There were female TIE Fighter pilots and not just a few, a fair amount. In fact think in EU generally more of the pilots tend to be female.
Last but not least, the TIE Bomber could be loaded up with a large payload of concussion missiles designed to take on fighters. It was not uncommon for some TIE Bombers to be used like this to engage swarms of fighters.
