What causes Palpatine to suddenly look like a raisin? He gets zapped up by the lightning which I suppose could have caused it, except a bunch of people get zapped throughout the series and no one else looks any different.

His eye colour changes, which is meant to signify someone giving in to the Dark Side as seen with Anakin. (Why doesn't Dooku have that going on? hmm). So maybe everything else goes weird because of he's no longer hiding his Dark Side power? A mix of him being a heavy Dark Side user and being hit by concentrated Dark Side power?

Does any one know of a reason? If not, have any theories?

His raisin complexion is his true form, brought about by years of indulging in the dark side.

The process he uses to hide his true face is called "mask" which utilizes old sith alchemical techniques. The mask is dispelled by dark side power, hence why his reflected lighting removes it.

Palpatine actually barely used the dark side most of the time, most of his time he had to lay low hiding his nature from the Jedi.

This doesn't stop the fact that he is probably the most powerful Sith to ever live. His appearance most likely came to be from his inherent bond with the Dark side, rather than his use of its power.

You need to tap activelly into the magical heroin to fuck your face. Anakin only got those yellow eyes when he was pumped by the dark side. Dooku apparently never did called too much on it therefore his looks didn't changed at all. Darth Maul was 24/7 by the looks of it. Palpatine spent most of his time doing political stuff, not indulging into DS rampages strong enough to alter his face.

Sheev Palpatine and Darth Sidious are not the same person. The Sheev we see in episode 1 is the real one, but in 2 and 3 it's actually Darth Sidious using the dark side to change his own appearance. When Mace Windu reflected Sidious' lightning, it revealed his true face.

Dooku percieved Sidious as a black hole of the Dark Side. It is fairly likely that he was naturally connected to the Dark Side, and thus, always tapping into its power (hence why he is so deformed). Not to mention how much energy he would need to use to hide his presence from the Jedi.

Using more negitive "dark side" aligned emotions such as fear or rage take its toll on the user using said abilities and powers. That being said one can be healed over time from not meditation and jedi teachings, but the use of positive emotions such as love and joy. Alternatively you could mask yourself to hide the damage it causes.

Ex1: A young Lord Malgus during the return of the Sith Empire.

Ex2: Darth Malgus years later during the Cold War.
