One thing you have to remember is that Jedi are only supposed to kill as a last resort- it' should never be their initial response, and I'm guessing this extends as far as Sith. They would have sooner disarmed Maul, or crippled him so as to end the fight.

Prequels for all their love of lightsaber fights, don't give much logistic thought to them. Grievous had four lightsabers being swung at speeds only machines can reach yet Obi-Wan was still able to beat him single handedly.
