Inside I have directories for categories/labels, then inside those are Markdown files. They are simple text files which can be nicely formatted in many different ways. I use SublimeText + plugin to format markdown files into HTML GitHub flavored style. You can do the same thing manually with GRIP utility. If you want something more vanilla use PANDOC.
The whole Notes directory is also a git repository so I have version control.
This setup is pretty flexible and you can easily sync to other devices via something like Syncthing.

MPV is a GUI, it's just not the same kind that windows users are used to.
MPC-HC makes the same mistake as vlc, which is that it packages its own codecs. The installer alone is 12.8MB, compared to mpv's 3.7MB when completely unpacked.
Also, mpv's IPC socket features make it unmatched when integrating it with other programs or the rest of the OS in general.

I'm arguing the exact opposite. If something comes with builtin codecs, you need to wait for the maintainers to update the codecs in the software package, AND you have the problem of duplicated codecs on your system, AND any security flaw in the codecs will take much longer to get patched for that specific media player.
Do yourself a favour and use a media player which uses your system's codecs. Then not only will it have a great library of codecs, but the time between upstream and packaging will be much shorter (because there's one less link in the chain and it doesn't need to be hard-coded into the media player).
That and you won't experience the media player specific bugs that VLC was so often ridiculed for.

I didn't mention that at all. I talked about IPC sockets. That has absolutely nothing to do with internet connectivity, and if you don't know what it is you should probably get a basic grounding in computing before you make more of a fool of yourself.

mpv "just works". Want to watch a youtube video? Launch mpv with that url. Want to pause a video? Click pause. Want to switch subtitles or audio? There's a button for that too. It's only the advanced features which require reading up on and 99% of the time nobody is going to care about those.
More importantly, a GUI doesn't make things easier. If you've ever seen VLC's advanced open dialog, you'll know that there's a lot in there which you can only understand by reading the manual. There's no way to abstract away from that which is inherently complex.
