It seems like Nirn is disproportionately ocean. Wouldn't the world ocean create a globally tropical climate like that of Pangaea, rendering glaciation in skyrim's north impossible? Also, if tamriel is so large, then wouldn't the mountains around cyrodiil create a rain shadow and cyrodiil would become a vast interior desert? Unless the Nibenay channel was level with the tides of course. Even then, the middle east is arid in spite of it's number of seaways. Especially considering the imperial city is at a comparable latitude to the Mediterranean.

From lore machinations of MK and Trainwiz, after some fanwanking we've discovered that Ocean themselves are Memory. This means we've patched a big plot hole with crazy lore and it's up in the air as to how it'll be explained in detail in the future.
As for other things you said, I've got no fucking clue. Keep in mind that beth aren't science fetchers and we can create a cop out by saying it's fantasy.

Planes are warped bubbled of space in Aetherius or Mundus or Oblivion or whatever (which are all larger planes in Aurbis too)
Laws of Physics exist because some very strong Ada forces something to act that way
For example on Nirn and Mundus in general laws of physics and natural order exists because Ehlnofey the Earthbones stabilized themselves into the realm itself and became The Laws. Y'ffre is the reason why forests and fauna in general exists, some other ehlnofey is responsible for gravity etc. Everything you see on Nirn is aspect of some spirit that is sewed into fabric of a plane
In case of Daedric Realms or any singular realms Princes themselves act as one giant Earth Bone and dictate everything, like Malacath who wants his realm to be a giant floating ash pile probably representing his grief over Trinimac.

People don't go to Lyg. Sometimes, Lyg comes to people, and that's when shit gets really bad. It's bled into Tamriel a few times, but those incursions were successfully fended off.

So in a way, Versidue-Shaie "ate" the imperial authority (consolidating it in the title of Akaviri Potentate) to become it.
Perhaps it could be construed that an Enantiomorph was also involved, with Reman III as the King, Versidue-Shaie as the Rebel, and Savirien-Chorak as the Observer. Who knows?
Either way the concept of "eating it to become it" seems to be a Tsaesci interpretation of mantling, or at least analogue or related to it.

Are there competing models to the "wheel and spoke"? To be honest I'm not a big fan of it because it limits oblivion to 16 major entities. I vaguely remember some piece of writing (or an NPC) in the Shivering Isles commenting on the possibility of countless daedra existing in Oblivion, unknown to mortals because they, like Jyggalag, never took interest in the mortal realm. That sounds way more interesting than the "wheel and spoke", which leaves no mysteries intact, and makes the universe feel small and limited.

It's only showing the realms that have been heavily covered by the games, and in a simplified manner. Daedric realms can't actually be seen or even fixed to a position. They are each their own domain which are all equally represented by the endless black sea of oblivion.
