Why is the Stormcloak symbol a bear? Wouldn't it make much more sense that it was a crow because Talos?

Same reason they are called Stormcloaks instead of Talosians. It's about Ulfric Stormcloak, the Bear of Markarth. The Talos shit is just window-dressing to the man's ambition.

Dremora apparently turn on weak summoners, so what would happen if you're in combat and things look grim, and a dremora you summoned took notice of your weakened state. Could it turn on you then, even if you were powerful enough to control it initially? Wouldn't that make summoning a dremora in combat like, a terrible idea?

Dremora are like a proud warrior race type deal, they aren't stupid, they'll finish the fight they're in before turning on their summoner, and by then most spells will have worn off, unless you're actually retarded enough to summon a Dremora for days at a time.

Also if you've summoned a dremora to fight for you, why are you fighting too? The dremora can handle it while you hang back, build your strength up, fire spells in to buff the dremora, debuff your enemies, or keep your magicka for in case the dremora fucks up and you need to summon a new one.

Also I find the civil war a stupid quest-line.

The Empire is dead but damn it the Stormcloaks are useless too. That's why I don't do the quests for either side, Skyrim's quest reward system is shit anyway, the guards will be bipolar about treating you like a god or scum anyway.
