I think their meteoric rise can be attributed to modern AAA games being either designed as theme park rides or as slot machines exploiting gambling impulses. For the former, watching an LP essentially delivers the very same experience as playing it, i.e. any contemporary Naughty Dog title, saving you money and time. No one watches LP's of Clash of the Titans or Farmville or whatever other mobile crap, just as they don't real games with actual challenge - excepting exceptionally skilled runs.
Besides obviously the rise of an intense casual market, which is also the reason for those design paradigms.
Finally, there's also the rise of "e-celeb" personalities. LP's used to be just walkthroughs with minimal intrusion from the host (take a look at pre-2008 entries on lparchive.org), but I guess that wasn't enough sugar for casuals, so now they demand hilarious comedy and obnoxious editing alongside their gameplay. I've heard it's sort of like hanging out with your vidya buddies. Who knew my buddies all suffered from severe autism?
LP's are primarily popular with children and steamcasuals, so I think another part of it is, as >>8770113 identified, trend-following. It's more important to be part of the club than to actually like videogames enough to actually fucking play them.
Actually, I think there's one more cause for the cancer. It's disillusionment with game journalism. LP's also often take the form of reviews, it's like getting a recommendation from your "buddy," especially when they have more specified taste that you know you tend to align with, you can see what he's playing and try it out.
Until recently, LP's were used for just that, besides highly skilled runs as mentioned, but you know, just seeing an unedited feed of the gameplay in action was enough. Casuals don't have the critical capability to form their own opinions so need an e-celeb to tell them what to think about the gameplay they're watching.

The reason it has become so popular is that a lot of twitch streamers and youtubers have evolved to basically be pseudo friends to a generation of people too shy to have real life friends or anti social enough to not have real life friends.
Japan was just the first nation to basically adopt the lifestyle of waifuism and the like it's just now slowly becoming a thing here in the west. Why so many people donate money to these streamers is when you hang out on a chat long enough you treat these streamers like your buddy and friend, more so if the streamer is basically using their streams to talk about their life and using the stream time to basically be their life blog.
Like Man V.S Game, he's a perfect example of this. He plays video games for long hours basically people get to hang out and chill with him and talk to him, he goes on about his life as he failed to become a weaboo in Japan and now lives in Montana. Where he is entertaining enough that people just laugh alongside with him and it's become a culture of pseudo friendships.

Look at the viewcount at the first vid in any series versus every other one; it drops precipitously.

It has nothing to do with the players, and everything to do with the games.
Modern games, especially AAA games, are all "cinematic". You're essentially playing just as an entry cost to see the next cutscene or reveal the next plot twist. How fucking shitty would it be if you went to a movie theater and had to play and win a round of some PvP game to get in the door, and then another to sit down? What if the movie paused every 15 minutes and you had to play some more before it would continue? That's how I feel about having to play some of these games, myself. I have no interest in the gameplay (they're usually FPS games that I don't like, anyway) and just want to waste some time and relax.
"Hardcore" games that take hours and hours to accomplish anything and are filled with stress are for kids that don't have actual jobs. When I get home, usually I want to unwind, not tear my hair out until 3:00am trying to "git gud". It's not my fault that even the shittiest video game writing (lookin' at you, ME3) is still more entertaining and compelling than Generic Superhero Movie Sequel #8347 and Generic Neutered Politically-Correct Comedy #75476 that Hollywood is shitting out this year. It's an efficient way to spend time, especially if the LP'er in question is competent enough to edit out the grinding parts and is an entertaining person in general. A game might take 60 hours for the player to complete, but I can get all of the satisfaction and ZERO of the stress and effort in 10 hours.
And as I said, I wasn't going to play that game, anyway. I play games that I enjoy; I don't watch LPs of games that I play at all, unless it's a player much better than I am and I want some quick tips without leafing through a wiki.

It's fun to watch people who are good at games play them well, especially in a competitive manner. It's like watching people play at a LAN party or arcade tourney. Sometimes you also want to gauge footage of a game your curious about purchasing. It can be a substitute for written reviews or demos if they aren't reliable or simply don't exist. Other times you genuinely enjoy the commentary of people playing games either because it's entertaining or insightful. Rare to find a non-cancerous individual in [CURRENT YEAR] but isn't non-existent. I rarely see people ever completely substitute playing games with simply absorbing another person's opinion. If they do that, it's rather easy to prove that they didn't actually experience it themselves - like speaking to a person who hasn't watched a movie/read a book and only read someone's review of it.
There are a lot of things to complain about in the current industry. Shitty LPers or streamers that are outliers to it are not one of them. May as well complain about people that only watch sports rather than playing them.
