Technically speaking, well-invested character can do pretty much anything.
Lich Warmage is a starting combination (no paladins unless you count priests).
But, if you want to go full minmaxing, pick Golem for otherwise unreachable Dim immunity and pick whatever class hidden ability you like, since, besides it, it's just a group of skills and profinecies on which you can catch up later.

I've heard this is like Dorf Fortress' adventure mode except good. My roguelike pedigree starts with ZAngband and ADOM and continues to this day with ToME and ADOM.

Do quests to get plats, spend plats on skills.
When skills get too high, grab the god item that helps you grind them better.
To gain weight, just eat without vomiting. It'll take ages though

Invisible enemies aren't that much of a problem if you are playing a mage character. Just spam ball spells. If you get lucky killing liches or have access to Lost Irva, the Mag-Abyss is probably a better hat for mages anyway because of the spell-enhancement. Also is less tha 1.0s for fairies.
