TL;DR I know I enjoy New Vegas but it is from Obsidian, not Bethesda. Should I get Fallout 3 instead?

Short answer: all of them, except tactics if that isn't your thing.

Longer answer: get both 3 and NV if you can, as both are good enough to merit playing. 3 gets better after you get out of the vault, and really how the fuck are you spending 45 minutes there? The vault section is fifteen minutes at most, and that's if you exhaust all the dialogue options of literally every NPC there.
