Both of these are very unlikely to happen.

Also OP your best bet would either be to give it food like the other anon said or actually let the sheep get to know you. Do you live on a farm or are you fencehopping?

I am sure that you don't have to care about getting any desease by fucking a sheep or any other animal. You may get hurt by hooves, thats all :)

But sheep are very shy, so it willtake many time to get them used to your presence.

Well sadly because a lot of people struggle to show even the minimum of human decency. Forced sex is easier, despite the very short amount of time it can take to develop a relationship with an animal. I cant grasp how people can enjoy that. It's far more pleasurable to me knowing the animal is enjoying it as much as I am and nothing was forced.

How would I tell? I imaging initiating sex would spook it out, regardless of whether it will enjoy it. If I started to finger it I imagine that would make it run away and even if it came back for more at that point I'd be thinking it doesn't like sex.

Also, how can I tell if she's in heat? Would that be a major plus, or are they the same about sex regardless of their heat.

Plus, how long should it take to get to know her? Will be be a few days or is an hour or so fine. I feel like petting her and letting her get to know my scent wouldn't take too long for her to be used to it.

You are right though, a UTI, while rare, is possible, but it's not something you only get from animals. You can get it from having sex with humans as well. If you did get a UTI you could just play it off as something you got after having sex with your girlfriend.
