Original Devilman is a manga. Which is pretty damn influential - even Anno admitted its influence on NGE.
Regarding TV anime, it follows monster of the week format. For me, it was entertaining. If you're not a fan of such things, just skip it and go read the manga. This anime doesn't need any more haters with unrealistic expectations.
Watch The Demon Bird and Amon OVAs first. They are direct continuation of The Birth, and these three titles are sort of separate from the TV series.
Also, extensive understanding of Devilman franchise is essential for CB Chara, which is one of the most hilarious crossover parodies I've ever seen. If you decide to watch this one, you should also have preliminary knowledge of Mazinger and Jack franchises.
